When the meet is processed, you can choose the cuts of your meat, and the thickness of your steaks. The meat will be hung to dry-age prior to getting cut, which provides more favor and tender meat. Our local butcher will provide you with options for your meat cuts. Dry-aging beef is a process that involves hanging freshly slaughtered beef in a temperature controlled environment from a couple of weeks to several months before being trimmed and cut. Cows are ready for market. What’s next? If you are purchasing half or quarter cow, we will match you with other buyers. Once the whole cow is ordered (a whole cow must be purchased) and deposits made, we make an appointment with the butcher. Note that timing on appointments can vary. The animal is delivered to the butcher and once the animal is butchered, we will receive the "hanging weight," (weight of the carcass after it has been butchered) of the animal. For instance when purchasing a half cow, say the hanging weight of the animal is 720 pounds. Half of that is 360 pounds. This weight does not include the tongue, heart liver or stomach. Hanging weight is approximately 60 to 65 percent of the live weight, and is priced at $9.50 per pound.The cut weight is the weight of the actual meat after it is dry aged for 10 to 14 days.
Cost of your beef. Upon ordering the meat, a deposit of $2,000 (whole), $1,000 (half) and $500 (quarter) is required. Once the beef is slaughtered the final payment is due. For example, a deposit of $1000 for a half cow was paid. The final cost is $9.50 per pound hanging weight. The amount for the final hanging weight of the 1/2 beef, if the weight is 375 pounds, 375 x $9.50 =$3562.50, minus the deposit of $1000 = $2562.50.The beef will be hung for dry-aging, for about 2 weeks. Customer will fill out the cut sheet for the butcher. Once the butcher has the cut the sheet, it is cut, trimmed and packaged, flash frozen and boxed. We will schedule a drop off time for it to be delivered.
